Apple Hearts with wholemeal spelt dough and cinnamon sugar

And this is how it's done:
Ingredients (for about 12 pieces)
- 250 g wholemeal spelt flour
- 125 g bold butter
- 1/2 tsp Ceylon cinnamon, grounded
- 200 g curd cheese or cream cheese
- 1 pinch of salt
- 1-2 tsp raw can sugar
For the coating
- 4 apples
- 1 egg
- 150 g cream cheese
- 1/3 tsp bourbon vanilla, grounded
- 1/2 organic lemon, grated
- 4 tsp raw cane sugar
- 1/2 tsp Ceylon cinnamon, grounded
- 2-3 tsp whipped cream, for spreading
- icing sugar for dusting
Preparation
- For the dough, knead all the ingredients together and chill for half an hour.
- For the topping, mix the egg with the cream cheese, vanilla, lemon zest and 2 tbsp sugar in a bowl.
- Mix 2 tbsp sugar with cinnamon in a small bowl.
- Cut the apples into thin slices.
- Preheat the oven to 180°C hot air. Line two baking trays with baking paper.
- Roll out the dough on a lightly floured work surface, about 3 mm thick.
- Cut hearts out of the dough with a knife. Knead the rest of the dough together again, roll it out and cut out hearts again.
- Roll up the edges of the dough a little to make a small high rim. Spread the dough hearts on the baking trays.
- Spread 2 tsp of the vanilla cream cheese cream on each of the dough hearts. Place the apple slices on top.
- Brush all with liquid whipped cream and sprinkle with cinnamon sugar.
- Bake in the oven for 20 minutes until golden brown and crisp.
- Leave to cool slightly and sprinkle with icing sugar to taste.
