You eat with your eyes by food blogger "Gaumenschmaus"

A highlight of this year's mushroom season, which we have been waiting for for a long time. Lastly, I was in a forest looking for mushrooms - I must honestly confess, I failed. Apparently I got lost in the wrong area - so I went on the farm market, where I got delicious chanterelles from Styria. Relish and dishes are two things to which I attach particular value, after all, you eat with your eyes. For the mushroom season and the related recipes, I chose the design Sunset. The warm colours fit perfectly to autumn and the golden chanterelles can be placed ideally.

My bread spread or dip is really quite simply made. Whether as an appetizer or quick lunch, it always fits. In addition, it can be prepared very well the evening before. All you need is fresh mushrooms, garlic, herbs and crème fraiche.

Important: The mushrooms must be well-cleaned - I work with the finest brushes that I own. :-)

 

Recipe for Chanterelles Bread Spread 

Preparation time

20 minutes

Ingredients for 4 servings

  • 600 g fresh chanterelles
  • 1/2 bunch of freshly chopped chives
  • 300 g crème fraiche
  • 4 medium cloves of garlic
  • coconut oil
  • salt/pepper

Preparation

Peel the garlic, finely chop it and fry it with the small chopped chanterelles in coconut oil until the water of the mushrooms has evaporated. Let the mass cool down.

Add the remaining ingredients in a bowl, season and store it in a refrigerator until ready for consumption.

Tip:

Serve it with fresh baguette - you will love it!
