ASPARAGUS LINGUINE WITH BACON, PESTO & CAPERS

Asparagus is finally in season again! Sabrina from Sabrina kocht (Sabrina Cooks) shares her method for preparing asparagus.

And this is how it's done.

INGREDIENTS

  • Linguine
  • 1 bunch of white asparagus
  • 150 g bacon cubes
  • 1 small glass of capers
  • 1 glass of wild garlic or lovage pesto
  • Salt and pepper
  • A little water
  • Parmesan, grated cheese
  • 2-3 tablespoons whipped cream

METHOD

  1. Cook the linguine (or spaghetti) al dente.
  2. Peel the asparagus and cut it into small pieces.
  3. Fry the asparagus in a pan and cover with water.
  4. Let it cook a little until tender, but still has a little bite.
  5. Then add the bacon cubes to fry them.
  6. Make a sauce out of it and enrich it by adding some whipped cream.
  7. Add some more water when possible.
  8. Finally add the linguine and stir in a little pesto and some capers.
  9. Taste and season the noodles.
  10. If you like, you can sprinkle some Parmesan or grated cheese on top.
